Spelt is an ancient grain and is a rich source of fibre, magnesium, niacin and phosphorous. Spelt flour, although high in protein, is low in gluten, when compared with wheat, and produces light and creamy muffins, pancakes and quickbreads with a sweet nutty flavour.
