A rich, flavorful West African-style stew infused with hibiscus juice.

- Prepare the Hibiscus Base or use Abilex Premium Zobo Drink

Season and Parboil the Chicken
In a pot, add chicken, salt, seasoning cubes, garlic, ginger, curry, thyme, and a little water. Steam for 10–12 minutes until partly cooked.

Make the Stew Base
Blend tomatoes, bell pepper, onion, and scotch bonnet until smooth. Heat oil in a pot. Fry the blended mixture for 15–20 minutes, stirring occasionally, until the oil begins to separate.

Add the Hibiscus Flavor
Pour in the unsweetened hibiscus juice. Add the cooked chicken along with its stock. Add bay leaf (optional). Cook on medium heat for another 15 minutes to allow flavors to blend.

Taste and Adjust
Add salt or seasoning if needed. Simmer for 5 more minutes until sauce thickens.
