Jordan Ridge Roasted Vegetables

Add our sauce onto your favourite veggies and you have an easy but delicious week night side dish.

Ingredients

  • 2 cups baby carrots
  • 1 red bell pepper
    chopped
  • 1 zucchini
    sliced
  • 1 red onion
    cut into chunks
  • 1–2 tbsp olive oil
  • 3–4 tbsp Sweet Jalapeno BBQ Sauce
  • Salt & pepper to taste
  1. Preheat oven to 400°F (205°C).
  2. Add all veggies to a large bowl. Drizzle with olive oil, sprinkle salt + pepper, and toss.
  3. Add Sweet Jalapeno BBQ Sauce and mix until everything is lightly coated.
    Roast for 25–30 minutes, flipping halfway through, until caramelized and slightly crispy on the edges. Optional: brush a little extra BBQ sauce on top in the last 5 minutes for extra glaze.
  4. Spread veggies on a baking sheet.
    (don’t overcrowd!)
