Here's a delicious soup recipe that uses your leftover Thanksgiving dinner, including turkey bones for broth and Jake's Friendly Cajun seasoning for a flavorful kick! Leftover Turkey and Veggie Cajun Soup

Ingredients

  • Turkey carcass
    (bones and leftover bits of meat)
  • 6-8 cups water
    (or enough to cover the turkey bones)
  • 2 tbsp olive oil
  • 1 onion
    diced
  • 3 garlic cloves
    minced
  • 2 carrots
    sliced
  • 1 cup broccoli florets
  • 2 cups cabbage
    chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup small pasta
    (such as elbow or ditalini)
  • 2 tsp Jake's Friendly Cajun seasoning
    (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish
    (optional)
  1. Make the Broth:
    Place the turkey bones in a large pot, cover with water, and bring to a boil. Reduce heat and simmer for 1-2 hours to extract all the flavor. Skim off any foam that rises to the surface. After simmering, strain the broth and discard the bones. Set the broth aside and shred any remaining turkey meat from the bones.
  2. Prepare the Soup:
    In the same large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft. Add the garlic and carrots and cook for another 2 minutes, stirring occasionally.
  3. Add Vegetables and Broth:
    Pour in the turkey broth, and add the broccoli, cabbage, and canned tomatoes (with juice). Stir in the Jake's Friendly Cajun seasoning, and bring the soup to a simmer.
  4. Add Turkey and Pasta:
    Once the vegetables are starting to become tender (about 10 minutes), add the leftover turkey meat and pasta. Simmer for another 8-10 minutes until the pasta is cooked.
  5. Taste and Adjust:
    Taste the soup and season with additional salt, pepper, and Jake's Friendly Cajun seasoning if needed.
  6. Serve:
    Ladle the soup into bowls, garnish with fresh parsley (optional), and enjoy a comforting, flavourful meal! This soup is a great way to enjoy your leftovers, and Jake's Friendly Cajun seasoning will add just the right amount of spice!
